St. Patty's Day cupcakes

Getting in on the cupcake craze... they are so much fun! And not as scary to decorate as a whole cake. I had WAY too much fun making these, and they were so well received at work that I had fleeting thoughts of "gee, I wonder if I could do cupcakes full time?"

Planning on looking for a part time job at a bakery this summer - the munchkin is going to daycare part time anyway (we want her to stay in the swing of things there so we don't have to do a big transition again in the fall), so.... figured maybe working in a bakery would give me a much better idea of what it's like to make a living at it instead of just goofing around in the kitchen.

So cool! How do you get the rainbows to stand up?

Working in a bakery for the summer would be really neat - maybe you'd get to experience everything from furrowed brows under two layers of flour when some bridezilla needs the whole cake changed to having people walk up to the case and say Ooooooo! How do you DO that? Mmmmm!

I will keep your lovely cupcakes in my head all day tomorrow when I'm sobbing on the inside over the end of Spring Break. :) *thinking rainbow thoughts*

Oh, I know. We had Thursday, Friday, and now Monday off. I am dreading Tuesday!

The rainbows are candy melts that I piped using squueze bottles on wax paper. Once they hardened (over night) I was able to peel them off and stick them into slits I had already cut into the cupcakes. Then I piped the icing grass around them...
